Veggie Burritos!


I think this may be my favorite meal ever (the veggies, not the cat). I kind of threw this together while I was visiting my parents over Christmas. It took a while to get everything together, but with the proper planning and timing, it would have gone a lot quicker.

Veggie Burritos
  • 1 Yellow squash
  • 1 Orange pepper
  • 1/2 yellow or sweet onion
  • ~ 2 teaspoons of dried cilantro (it was good, but fresh would have been better)
  • ~ 1 tablespoon of chili powder
  • ~ 1 teaspoon of cayenne pepper (add more if you like it spicy)
  • ~ 1-2 tablespoons of fresh lime juice
  • couple of tablespoons of vegetable or olive oil
  • salt and pepper to taste
Slice the squash into half moon shapes. Cut the pepper into thin strips and then cut those in half. Chop the onion into large pieces. Heat the oil in a frying pan, then add the onions. Add some salt to the onions to help them soften. Once they have softened, add the other vegetables and spices. Cook the veggies until tender. Add the lime juice at the end before serving.

And for the meatetarians is the crowd, you can add chicken or steak or beef and it's great. You can also skip the veggies and cook the meat instead of the veggies, but you'd never do that, right? *Says the nutritionist-in-training shaking her finger at you!*

Serving suggestions:

I made mine brown rice and homemade black refried beans (that was the long part but you could always use canned beans a instant rice) and put it down on the tortilla first. I then added the veggie mixture. On top of that, I sprinkled some cheese. Then I added tomatoes, sour cream, avocados and a sprinkling of lime juice. Just roll it up and enjoy!

P.S. - I'll post the refried beans recipe next time along with a truly delicious lime dessert!!

Snow? In Raleigh?!

As some of you are aware (having actually lived through the experience), it snowed today! School was canceled and all was right with the world! :) Truman actually ventured out into the snow. He got as far as the edge of our grill before turning tail and coming back inside. He wanted so badly to be outside, but couldn't stand being in the cold, wet snow. It was really funny to watch!! Here are some more pictures of our house in the snow. It's our first snow in our first house! (I know that it's super corney, but I'm excited. Don't rain on my snow, ok?)





I had some friends come over and we watched Harry Potter and the Order of the Pheonix while I made cinnamon rolls. The movie was great! I cannot say the same about the rolls. They tasted fine, but were hard as a rock. I'm just not gifted as a baker. Oh well.

And, as promised, here are some pictures of our newly rearranged living room. I realize that I haven't posted too many photos of the inside of our house since we've moved (thank you Rachel) and so, occasionally, as the rooms are cleaned, I'll post some pictures of the house. And now, ladies and gentlemen, the living room (Husband and cat included).

I have returned!!

I have returned from the cold, frozen tundra that is Utah! Hallelujah for warm North Carolina winters!! I'm glad to be home, but a little less glad to be back at school. It was really nice to not have to worry about readings or assignments. *sigh* But, if I want to graduate eventually, I'll have to keep at it. This semester looks like it might be a tiny bit easier on me than last semester. Let's keep our fingers crossed.

While I was in Utah, my Dad, my brother and I went cross-country skiing, but when we got there we were not able to go cross country because of a mix up with buss schedules and such. Any way, we went snowshoeing up a mountain. And when I say up the mountain, I really mean, up the side of the mountain. I think we gained about 1000 feet in elevation over the course of a couple of kilometers. It was crazy beautiful though! It was pretty steep, but it had snowed recently and everything was quiet (except for us). The pictures on the side there are some of the better pictures I took on the hike. Beautiful. Just beautiful... and ridiculous cold.
